Answers to your question: "Would linked mode give me vSphere redundancy across multiple sites? i.e. if one goes down, the other would just take over."? - If its 5.1, you have an option for failover but then you need to deploy load balance for vCenters as well.In other versions, linked mode is just a view to manage multiple vCenters. and not for redundancy. Is Linked Mode, specifically, an acceptable method to achieve vCenter (5.1) redundancy?  Would both linked servers be able to handle vCenter duties alone should the other go down? - Yes as mentioned earlier,vCenter 5.1 can be used for redundancy.If bandwidth is an issue, I would recommend you to use vCenter Heartbeat.Yes linked mode can handle failover mode when having load balancer but bandwidth should not be an issue
